Who steers what at Flanders Circular?
Did you know that beer trot is the ideal ingredient for pizza dough, pasta and pancakes? And that you can use it to make protein bars for avid fitness enthusiasts? Yet today we only incorporate it in less than 1% of our food products. NextGrain wants to boost that percentage. The company processes grain waste from beer production into marc flour and seeds.
Residual product for animals and people
Our country has some 400 breweries. They produce almost 2.2 million liters of beer every year. But that is a very polluting process: growing grain requires a lot of land and water, and per 100 liters of beer, some 20 kilograms of 'beer waste' remains. Many breweries already sell that residue to livestock farmers, who use it to feed their animals. But beer marc is also packed with protein and fiber for humans, and can therefore be used perfectly in our kitchen.
Draff products low in sugar and gluten
NextGrain processes the beer marc, for example, into flour and seeds. With the flour you can make various sweet treats, such as muffins and cakes. The seeds, in turn, are the perfect flavoring in granola and muesli. The products also contain hardly any sugar or gluten. Therefore, they are ideal for diabetics and people following a low gluten or ketogenic diet, for example.
